Sun-Kissed Peach, Tomato, Mozzarella & Basil Salad

One thing I truly miss about our home in Leawood was my little garden. There was something so rewarding about walking outside and harvesting fresh tomatoes, cucumbers, jalapeños, basil, and other herbs that I had grown myself. Gardening has a way of reconnecting us with our food, the seasons, and the simple joy of creating something nourishing from the earth.

While I may not have that same garden space today, I still love celebrating the flavors of summer produce. This Sun-Kissed Peach, Tomato, Mozzarella & Basil Salad brings together some of my favorite seasonal ingredients with juicy peaches, ripe tomatoes, fragrant basil, flaky sea salt, and a drizzle of reduced balsamic glaze. It is a beautiful reminder that simple, fresh ingredients can create meals that nourish both the body and the soul.

Ingredients

  • 2 ripe peaches, sliced

  • 2 to 3 ripe tomatoes, sliced (heirloom tomatoes are especially beautiful)

  • 4 ounces fresh mozzarella, sliced or torn into bite-sized pieces

  • ¼ cup fresh basil leaves, torn

  • 1 to 2 tablespoons extra virgin olive oil

  • 1 to 2 tablespoons reduced balsamic glaze

  • Flaky sea salt, to taste

  • Freshly cracked black pepper (optional)

Instructions

  1. Arrange sliced peaches, tomatoes, and mozzarella on a serving platter.

  2. Sprinkle fresh basil over the top.

  3. Drizzle with olive oil and balsamic glaze.

  4. Finish with flaky sea salt and black pepper if desired.

  5. Serve immediately and enjoy the flavors of summer.
